Collard Greens

Ingredients
- 1/2 lb smoked meat, large bite-size pieces
- 1/2 ea sweet onion, ribs
- 1 T cajun spice
- 2 T liquid smoke
- 2 T beef soup base
- 2 T apple cider vinegar
- 1 bnch collard greens, washed, stemmed, 1/2" - 1" slices
Instructions
- In a large pot, saute the onions and pork to clarify the onions, then add 2 qts of water, spice, liquid smoke, and soup base.
- Bring to a boil, add the greens, and simmer until greens are tender (45 to 60 minutes), stirring occasionally.
- Adjust seasoning, plate and serve.
